I really don't know where to begin with this thank you note. Quite frankly, I didn't really expect everything to be so perfect...

I never felt pressured or criticized for our budgetary concerns, I was able to share my ideas and dreams with consistently welcoming and accommodating responses...

...Then came the food tasting last January...a surprisingly fun time! Our tastes and personality were obviously considered in the menu ideas. James was so friendly and easy going about everything...The food was suspiciously delicious, as was the sangria, and we left thinking, "there's no way it will ever taste this good for 100+ people..." We were wrong. Absolutely every single person we spoke with, even the ones with "discerning" tastes, reported that it was the best food they had ever tasted at an event, and that the staff was so friendly and fun...

One of guests, formerly a chef a the Four Seasons, raved about the food, as well, which you realize, is a small miracle. The point is, form the emails to the table decorations, to understanding casual elegance, to James' warm personality, creativity and talent, to Cinda's attentiveness, to all of your staff's friendliness, attentiveness and humor, because of your smiles and ours...you will always be a part of our wedding memories. I am sure all your customers must send you thank-you notes, because it was all simply perfect. Thank you so much for making our dreams and ideas reality. I just wanted to thank you again for the incredible job you did catering our New Year’s Eve Party.  It was important to me that the food be perfect, and you really came through.  The coconut shrimp were absolutely the best I’ve ever had, the goat cheese and mushroom tart was incredible, and the balsamic glazed roasted vegetables were so good they were gone before I could try them.  The entrees were all just as wonderful. Everyone raved about the food, which certainly made me happy.

I also really appreciate the time you took with set up and display of the food.  I could not have done it myself, and everything looked beautiful. I was nervous about how everything would work, but when I saw the attention you put into all the details, I knew I didn’t have to worry.

Now I know why you call yourselves the Crazy Chefs...your complete obsession with perfection in all aspects of the dining experience  borders on insanity!!!!!  How can anyone who hand picks olives be sane; who dedicates so much time to making the most ingenious garnish out of two fried potato chips with a sage leaf pressed in the middle have all his marbles; who amuses his guests with an apple cinnamon soup be considered rational????

All kidding aside, the meal was superb. Beginning with the succulent coconut crusted shrimp and ending with the decadent Banana desert everything in the middle was one gastronomical delight after the other. (Forgive me for not having the menu in front of me so I can't relate the proper names of the dishes.) The goat cheese pastry surrounded by baby kiwi, oh my....such a delightful squirt of sweetness; the mustard greens to cleanse the palate; the cod in a maple-flavored sauce ending with the scrumptious veal chop were one dish better than the other. The sauces, the sauces, the chipolini's, the mushrooms and baby beets, and the cheeses...I'm running out of adjectives.

Best of all was our beautiful waitress that any man would give anything in the world to claim as his own!
